This is a very plain and uncomplicated recipe I found in my moms recipe box. The original recipe called for "Mrs. Smith's Mealmaker Pie Shell", but since those are no longer available, I made my own shell out of a quiche crust recipe I also found in her recipe box. Convenient!

NOTE: This version of the recipe is for a small quiche. For a full size 9" pie size quiche, double the ingredients for both the quiche and the crust. Also, these 2 recipes call for 2 different oven settings. I compromise between 350 and 400 by setting the oven to 375.



Quiche Lorraine

Ingredients
2 eggs
3/4 cup milk
1/4 tsp. salt
dash cayenne
1 cup shredded Swiss cheese
1 tbsp. flour

Instructions
Heat oven to 350.
Combine eggs, milk, salt and cayenne, mix well.
Toss the cheese with the flour, and stir into to the egg mixture.
Pour into pie shell and top with bacon curls (recipe here).
Bake 40-45 minutes. Let stand 10 minutes before serving.

Simple Quiche Crust

NOTE: This shell is NOT recommended as a substitute for baked pie crust shells. Remember, this version is for a small quiche. Double the ingredients for a 9" quiche.


Ingredients
1/2 cup flour
1/4 tsp. salt
1/8 cup olive oil
1/8 cup ice water

Instructions
Mix flour and salt with a fork.
Beat the oil and water to blend and thicken.
Using a fork, blend it all together.
Press into pie dish, and fill with quiche mixture.
Bake at 400 until done.



Less is more.
