Sweet Horseradish Pickles

My great-grandma Rachel enjoyed making these at Christmas. It was her favorite time to be surrounded by children. Her daughter-in-law, my grandma liked to save the juice as a salad dressing. She in turn passed the recipe down to her daughter-in-law my mother. My mom makes this for my dad as special gifts. She does her best to keep it a surprise in the fridge from his nosy eyes. Mom always decorates the jar differently and creatively each time.

INGREDIENTS


1 quart jar of sliced or speared dill pickles, drain the juice and discard it.

1 1/4 cup granulated sugar

2 tablespoons dried onion

1 teaspoon celery seeds

3 tablespoons vinegar

1 tablespoons horseradish

DIRECTIONS

In order listed put the sugar, onion, celery seed, and horseradish in jar with pickles. Shake the jar. Move the jar into the refrigerator. For several days turn the jar frequently. The pickles should be ready for enjoyment.
