Old Fashioned Eggy Potato Salad 6 - 8 servings

This is potato salad the old-fashioned way- with lots of egg, crunchy celery and sweet relish. It will completely disappear at a picnic. My mom use to add maybe 1/2 cup of sliced green olives, too. I loved it best that way! And the pimento's added a little bit of color. Submitted by Lynne Perry.

Ingredients
5 medium size potatoes: boiled, peeled and chopped
3 large eggs: hard boiled and chopped
1 cup chopped celery
1/2 cup chopped onion (optional)
1/2 cup sweet pickle relish
1/4 teaspoon celery salt
1 tablespoon prepared mustard
ground black pepper to taste
1/4 cup mayonnaise
(1/4 teaspoon garlic powder and 1/4 teaspoon salt) -OR- (1/2 teaspoon garlic salt)

Mix all ingredients well and chill in refrigerator.


Less is more.
