Home Made Butter Biscuits

This isn't your "Bisquick" variety, this is how we use to make biscuits. No holiday dinner was complete without them. You could take the dough and make individual biscuits then put them closely side by side in a baking dish or pie plate to get "pull a part dinner rolls".

INGREDIENTS
3 cups all purpose flour
1 teaspoon salt
1 tablespoon baking powder (not baking soda, baking powder!)
3 tablespoons of sugar
6 tablespoons of butter (or you can use shortening, or margarine, but real butter is better)
1 cup of whole milk or buttermilk (you can make butter milk by adding 1/2 tsp white vinegar to a cup of whole milk and let it sit at room temp for an hour)

DIRECTIONS
1. Preheat oven to 425
2. Mix together the DRY ingredients.
3. Using a spoon or spatula (or your fingers) rub the butter into the dry mixture until it is like bread crumbs.
4. Add the liquid to the dry mixture and mix with a spoon (I use a wooden one) until you have a nice soft dough.
5. Grease a cookie sheet or a pie plate or baking dish
6. Pat the dough into a rectangle about 1/2" thick. Brush it lightly with more melted butter. Then fold it like a letter... in thirds... fold 1/3 of the dough up into itself and then the other 1/3 of the dough over the other fold.
7. Roll the rectangle lightly with a floured rolling pin, until the dough is about 1/2 - 3/4 " thick again.
8. Cut the rectangle of dough into squares about 2x2 inches. Place on the cookie sheet about 1" apart or in a baking dish or pie plate with just a little space between them for pull apart bicuits.
9. Bake for 15 to 20 minutes, until lightly browned. (You can brush them lightly with butter to give them a nice glaze look).
10. Remove from oven and serve warm. If they go cold, reheat at 250 for 10 minutes.
